    Ingredients you’ll need:
    – 1 cup brown or green lentils, rinsed
    – 1/2 of a red onion, diced
    – 2 stalks celery, diced
    – 2 carrots, diced
    – 3 garlic cloves, chopped
    – 1 TB rosemary, finely chopped
    – Pinch of kosher salt
    – Pinch of black pepper
    – About 3 cups water or stock
    – 1 TB cider vinegar
    – 1 TB whole grain mustard
    – 1 TB chopped parsley
